Natural Patina Non-Stick
The natural, effective non-stick surface called patina will develop through the use of this traditional Chinese seasoning wok. When ready to start cooking, place the wok centrally over the hob ring, add oil, and heat on a medium-high setting. Once the oil starts smoking, you’re ready to start cooking.
How to remove the Protective Coating from the Wok before use:
- Immerse the bowl of the wok in hot water for 5 minutes to soften the lacquer coating.
- Then use a coarse scourer or wire wool with a generous quantity of detergent to scour the inside of the bowl for at least 3-4 minutes until all of the clear protective coating has been removed.
IMPORTANT: If using the wok on a glass-topped hob, including induction, repeat this scouring process on the exterior base of the wok, the area in direct contact with the hob. If not removed, the lacquer will melt onto the glass. Please ensure that both the inside and outside of the wok are thoroughly washed and dried before seasoning the interior.
Thereafter – after use:
To clean, hand wash with hot water and mild detergent if desired. Thoroughly dry with a clean cloth. To build the natural protective lacquer called patina, avoid using scouring powder, abrasives, or metal scourers after use.
